The Shell Shocker imparts a deep ruby brown hue. It provides a heavy dark caramel taste, additional body, and flavour stability. Subtle notes of burnt sugar and raisin can be detected. No enzymatic potential. Contains gluten.
This malt is produced at the Pauls Malt Ltd. plant in Knapton, North Yorkshire, UK. After the malting barley, with high germination and low nitrogen content, has gone through the soaking and germination phase, the malt is heated in a drum burner. Here, the endosperm becomes a liquid sugar solution that then crystallises into a glassy sugar layer.
