Drum-roasted caramel malt that gives a balanced full-bodied finish and a deep red colour to the beer.
This malt is produced at the Pauls Malt Ltd. plant in Knapton, North Yorkshire, UK. After the malting barley, with high germination and low nitrogen content, has gone through the soaking and germination phase, the malt is heated in a drum burner. Here, the endosperm becomes a liquid sugar solution that then crystallises into a glassy sugar layer.
Pauls Malt Lucky Squid gives a balanced, sweet caramel flavour and extra body. No enzymatic potential. Contains gluten.
- 110 - 130 EBC, gives an amber to red hue at higher usage rates
- 2-10% of the mix (as high as 20% for strong beers) in addition to other base malts
- Usage: German-style Lagers, Ales, Pale Ales, IPA, Porters (for sweetness)
