Dark-brown, slightly aromatic kernels. Contributes dark-amber to deep-coppery color to finished beer. Adds mouth-feel as well as a rich malt accent to brew. Very intense, complex, mild, caramel flavor; bread crust. Use up to 5% of total grain bill for pale beers, up to 15% for dark beers. Contains gluten.

The worldwide trend towards ever more specialty beers with character, as well as the growing acceptance of these beers by consumers are the key forces behind the increasing use of specialty malts in the brew houses of large, midsize and small breweries.
