Hop water: the surprisingly simple but delicious combo of hops and sparkling water!
For those who love the intense, refreshing flavour of hops but are looking for a non-alcoholic or low-calorie alternative to beer, there is hop water! You can also find this new trend under the name ‘hop soda’, hop seltzer or ‘sparkling hop (iced) tea’. And honestly, it's surprisingly easy to make yourself! We explain to you step by step how to brew your own hop water with your favourite hop(s).
Water
Bring the water to the boil and then cool it to 75 °C. You can add the boiling water to your stainless steel fermentation vessel and let it cool in it to the desired temperature. Those who want can manipulate the water with calcium sulphate and/or calcium chloride to further accentuate the hop flavours, but we'll leave that to the experts for now. Keep it simple to begin with!
Citric acid or lactol
To give your hop water that refreshing flavour, it's best to lower the PH to 4.5. It's not an absolute must, but it gives more depth to your flavours.
Hops
Choose your favourite aroma hops from our range. Download our hop guide for a handy overview. Use 0.5 - 2 grams of pellets of your favourite aroma hop per litre of water.
It is best to put the hop pellets in a fine mesh hop bag, so not too much hop residue ends up in your water. Allow the hops to infuse in the 75 °C hot water for 10-20 minutes. Then remove the hops.
After that, you have the choice of bottling or kegging. When bottling, we are going to add sugar and yeast to make carbon dioxide, when chalking, you can work under pressure to make your hop water sparkle!
Bottling
When the hop water has cooled, you can add a mixture of bottling yeast and 7 grams of bottling sugar per litre to your hop water. Mix well and bottle! If you find it more convenient, there are Carbonation Drops, an easy alternative to a bottling sugar mixture. Keep in mind that about 0.3% alcohol is formed by the refermentation in the bottle.
Kegging
Make sure your keg is cleaned and disinfected before you undertake anything. Then add your hop water to the keg. Put the keg under 2 bar pressure with your CO2 cylinder or Beerstream and put the keg away cold for 1 to 3 days. By shaking your keg well from time to time, carbon dioxide will get into your hop water faster and your drink will be ready to serve within 24 hours! The more pressure you put on the water, the more sparkle you will end up with. Experiment until you find what you like best!
Oxebar pressure kegs and AEB Soda-kegs, for example, are ideal for saturating your hop water!
